This Asian-inspired recipe features a marinade made with soy sauce, vinegar, and honey, making the shrimp full of flavor. The garlic and jalapeno also give the orzo a nice zing.

Try pairing the grilled shrimp with whole wheat orzo for more fiber, or stick to regular orzo for a satisfying meal that’s still under 300 calories. 

This Orzo with Grilled Shrimp recipe is perfect on its own or paired with a veggie-packed salad or broth-based soup to hit your calorie goals. 

We love grilling shrimp as a healthy way to prepare this protein-packed shellfish. If you don’t have an outdoor (or indoor) grill, try cooking the shrimp on a cast-iron grill pan instead (sautéing the shrimp on the stovetop works as well).

Recipe Ingredients

  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey
  • 1 teaspoon cornstarch
  • 2 teaspoons dark sesame oil
  • 12 ounces medium uncooked shrimp, peeled and deveined
  • 1 cup orzo
  • 1/4 cup defatted chicken broth
  • 1 tablespoon minced garlic
  • 2 teaspoons chopped fresh ginger
  • 1/4 cup sliced green onions
  • 1 teaspoon minced jalapeno peppers
  • 1/2 cup shredded carrots
  • 1/2 cup diced sweet red peppers

Recipe Directions

Step 1: In a resealable plastic storage bag, combine the soy sauce, vinegar, honey, cornstarch, oil and shrimp. Seal the bag; shake well. Refrigerate for 15 minutes, turning occasionally.

Step 2: Preheat the grill. Remove the shrimp, reserving the marinade; grill for 3 minutes, or until pink and cooked through.

Step 3: Cook the orzo according to package directions.

Step 4: Meanwhile, in a 10-inch no-stick skillet over medium-high heat, bring the broth to a boil. Add the garlic, ginger, green onions, jalapeno peppers, carrots and red peppers. Cook and stir for 2 to 3 minutes. Add the orzo, grilled shrimp and reserved marinade. Cook and stir for 1 to 2 minutes, or until the sauce thickens.
